Ingredients: 
  • 1 tbsp refined coconut or vegetable oil 
  • 1 lb crisp okra, split the long way 
  • 10 oz tub little tomatoes 
  • 1 medium sweet onion, vertically cut 
  • 24 oz shrimp, stripped and de-veined 
  • 1 tsp garlic, minced 
  • 3/4 glass dry white wine 
  • 3/4 glass fish or chicken soup/stock 
  • 1 lemon, squeeze and pizzazz 
  • 3-4 sprigs crisp thyme, or 1 tsp dried thyme leaves 
  • 2 tsp cajun zest blend, (see post) 
  • 1 tsp smoked paprika 
  • ocean salt/new ground pepper 
Directions :
  1. Add the oil to an overwhelming skillet (ie. cast iron) over high warmth. When it is burning hot, include the okra. Try not to mix until you see edges singing. You need some decent shading. Blend sufficiently just to turn the okra. 
  2. Add the tomatoes to the hot skillet, including more oil if fundamental. Cook the tomatoes until they start to singe and blast. Expel from the skillet 
  3. Include the cut sweet onion, cooking on high warmth until the onions mellow, and get some shading on the edges. Expel from the dish.
