INGREDIENTS
- 4lb P0rk Butt Roast, without bones or bones
- 3 tablespoons of pink sugar
- 2 teaspoons of salt
- 1 teaspoon mustard ground
- 1 tsp black pepper
- 1 teaspoon shallot powder
- 1 tsp paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 1 1/2 cups of chicken stock
- 1 tablespoon Worcestershire sauce
- 1 teaspoon of liquid smoke
- 2 tablespoons 0live oil
- 1/2 - 1 cup of your fav0rite BBQ sauce.
INSTRUCTIONS
- Cut the fat fr0m the roast pork and cut it into 4 equal sizes.
- Add all the dry ingredients to a large b0wl and stir together. Add pieces of roast pork to scrub the mixture and coat well.
- Add 2 tablespoons of olive oil to the Instant P0t and set to saute. After showing the heat, add 2 pieces of pork. Burn each side for about 2 minutes each. Remove the p0rk and set it aside on a plate. Repeat with the remaining p0rk chop.
- After the pork is burned and removed fr0m the pan, press cancel and add 1/2 cup of chicken stock. Use a wooden spo0n and deglaze the bottom of the pot. Make sure to scrape all the bits. Then add the remaining chicken st0ck. Worcestershire sauce and liquid smoke.
- Place the pork ch0p directly into the liquid in the pan, keeping the distance as possible. Tighten the lid and make sure the vent is set to sealing. Cook pressure / manually at high-pressure f0r 60 minutes. Then let the pressure release naturally for 20 minutes or until the pin drops.
- Throw p0rk in a large bowl and shred it with 2 forks. Add your favorite BBQ sauce as desired. Or use juice from Instant Pot - it's full of amazing flavors!
