INGREDIENTS


  • 2 pieces of p0rk, 1 boneless thickness
  • 2 tablespoons brown sugar
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 teaspoon of paprika
  • 1/2 teaspoon onion
  • 1 tablespoon butter
  • 1 cup of chicken st0ck
  • 1/2 tablespoon of Worcestershire sauce
  • 1 teaspoon 0f Liquid Smoke


INSTRUCTIONS


  • Mix seasonings and brown sugar and rub into both sides of the pork.
  • Set Instant Pot with stir-fry (high) and add tablespoon butter. After it is hot, add pork and chocolate on both sides of each for 1-2 minutes. Remove pork and set aside. Press cancel.
  • Add 1 cup of chicken stock and use a wooden spoon to remove the beets from the bottom of the pan. Add Worcestershire sauce and smoked liquid and add pork directly to the pan in liquid.
  • Safe lid, make sure ventilation is set to "sealing" and pressure cook (manual) for 7 minutes. After completion, let the pressure come out naturally for 12 minutes. After 12 minutes, quickly remove the rest, remove the lid and pork.
  • Let the pork rest for about 5 m1nutes before serving.

NOTE


  • For the best results, it is recommended to use salted pork. Packaging usually shows that pork contains a solution (usually 12%) to maintain moisture and softness.
  • If your pork chop has not been pre-brined as described above, it is strongly recommended to use simple saltwater: A solution of 1/4 cup (4 tablespoons) of salt to 1 liter (4 cups) of water. Place the pork (or other thin slices) in one layer on a shallow plate and then pour salt water over it. Let stand for 1/2 hour to 2 hours before cooking. (thanks to reader Jack P.)
