Garlic Basil Chickén With Tomato Buttér Saucé
Ingrediénts
1 lb bonéless, skinless chicken breasts
salt and peppér
1/4 cup olivé oil
5–6 roma tomatoés, diced
3 garlic clovés, minced
a handful of loosély wrapped fresh basil cut into ribbons
1/4 cup land O lakes Européan Style Super Premium Salt Butter
8 ouncés of pasta, such as spaghetti, linguini or bucatini

8 ouncés of pasta, such as spaghetti, linguini or bucatini
Instructions*
- Covér the chicken with plastic wrap and pound each piece to a uniform thickness, about an inch or more in the thickest parts (this simply helps it cook faster and more evenly). Remove the plastic and generously sprinkle each piece of chicken with sea salt and freshly ground pepper.
- Preparé the tomatoes, garlic and basil and set aside. Prepare the pasta according to the directions on the package.
- Héat the olive oil in a large thick pan until a drop of water sizzles on top. Add the chicken and fry for several minutes on each side - the goal here is to cook the chicken AND get a nice browning on the outside. Once the chicken is cooked, set aside.
- Lét the oil cool for a few minutes, add the tomatoes and return to the heat (if you add the tomatoes to the hot oil, it will be a splash festival). Simmer to cook the tomatoes in a thick sauce type mixture. Add the garlic and butter and stir to combine until the butter is melted. Add the chicken back to soak in the sauce for a few minutes.
- Just beforé serving, stir in the basil. Top portions of pasta with chicken and sauce.
